Saturday May 4, 2024 at 2 p.m.: Brazilian cooking workshop! During this 3.5 hour class, we will make and taste Brazilian cheese bread on site. Then we will make the typical dish of Bahia, mosquequeca with shrimp and coconut milk. We will also see the making of delicious little empadas, small pies rich in butter and creamy chicken. A real delight! We will end with a quick demonstration of tapiocas, these magical little pancakes made with cassava starch. Register HERE
Sunday May 26, 2024 at 2 p.m.: Vietnamese cooking workshop! For this class, we will see four dishes of Vietnamese cuisine together. First of all, the famous Banh cuons, these delicious rice and tapioca pancakes stuffed with pork and mushrooms. Then the banh kots, small pancakes with coconut milk and rice flour, topped with shrimp and pork. We will simmer an irresistible dish of pork with lemongrass and the course will end with a dish explosive in flavors and textures, crispy beef with chili sauce. Register HERE
Saturday June 8, 2024 at 2 p.m.: Maki and mochi workshop! An afternoon dedicated to Japanese cuisine. We will prepare the sushi rice, then everyone will make two maki, these famous and delicious rolls, with surimi crab and avocado. We will soon make mochi, these little soft treats. We will first see the ingredients used then we will cook the azuki bean paste, the anko, and its sidekick, the more versatile shiroan made from white beans, which will be used to prepare the mochi lime. We will also do the tamagoyaki, Japanese omelette, totally irresistible! You will leave with the maki and the mochi carried out. Register HERE
Sunday June 9, 2024 at 2 p.m.: Inverted puff pastry, tarte tatin and millefeuille workshop. For this class, we will each make inverted puff pastry according to the rules of the art, with a simple technique and butter that can easily be found commercially. Everyone will then make their own spiral tarte tatin. Then we will make a millefeuille which will be tasted on site. Don’t wait any longer to learn all the secrets of inverted puff pastry, and see how easy it is to make at home!
Saturday 23 and Sunday 24 November 2024: Chocolate madness workshop! This course, spread over two days, is unique in France. We will indeed see the manufacturing of the bean to the tablet. Dark, milk and white chocolate will be made directly and together. We will make homemade Nutella, pralines, but we will also learn more about cocoa butter and its tempering. We will start this course on Saturday morning around a hot chocolate and will learn all the secrets of chocolate: roasting, crushing, winnowing and conching… My book “I make my homemade chocolate” published by Solar and prefaced by Christophe Michalak, will also be available to you offered during this workshop! The workshop is located in Les Lilas, a 4-minute walk from the “Mairie des Lilas” metro on line 11 (15 minutes door to door from République).
For this new adventure, partners followed me and allowed me to make this dream I had come true. KitchenAid was the first to provide me with all the necessary equipment. We will therefore work with gas, hood, steam oven, Twelix oven, microwave oven, robots, utensils, pans of the brand.
The location is even a permanent KitchenAid showroom in France from September!
