Bean season, we are going to make a typical Andalusian dish: fried beans with ham and fried eggs. I am going to follow my mother-in-law’s recipe who is from Granada, you will see what a delicious and complete dish. Obviously. If you want to make this recipe out of season you can use frozen or packaged beans.
FRIED BEANS
INGREDIENTS:
2 kg beans with pods
1-2 chives
50-70 g of shaved Iberian ham
3-4 eggs
Peppermint
Extra virgin olive oil
Pour a splash of extra virgin olive oil in a frying pan and add the chopped chives. A pinch of salt and cook, stirring occasionally. We add a little more olive oil and add the beans. Mix well with the onion, add a little salt and stir. Cover and let it cook over low heat for about 30 minutes. Every 10 minutes we are going to monitor and stir the beans.
When there are 5 minutes left to finish, we add a couple of sprigs of mint. We stir, cover and let the time run out. After time we remove the mint and add the shaved Iberian ham. We mix and serve on the plate or presentation source.
